Manila Hotel’s Café Ilang-Ilang Releases Delicious Kurobuta Pork Dishes

Throughout the month of June, Café Ilang-Ilang at The Manila Hotel will feature a variety of exquisite dishes highlighting the exceptional flavor and quality of local Kurobuta pork.

Kurobuta, a pork variety from the English county of Berkshire, is the Japanese term for “black pig.” Kurobuta pork is often referred to as the “Wagyu of pork” due to its abundance of marbling, tenderness, and complex flavor profile.

Executive Chef of The Manila Hotel, Konrad Walter, exclaims, “We are thrilled to enhance the Café Ilang-Ilang buffet with produce from Esguerra Farms.” Esguerra Farms, located in Lipa, Batangas, is committed to employing sustainable and moral agricultural methods that prioritize animal welfare and environmental protection.

The pigs are reared in a safe, clean, and stress-free environment within their own Kurobuta Village on the farm. The pigs are housed, fed, and pampered, resulting in a higher pH level that allows for optimal marbling and the preservation of the meat’s natural flavor and color.

The culinary team at Café Ilang-Ilang has designed a dinner buffet that highlights the exceptional qualities of Kurobuta pork. Pork Ramen Soup, Kurobuta Pork Stew in Red Wine with Sweet Potato and Prunes, Korean Style Grilled Pork Belly, Spare Ribs Mandarin Style, Roasted Crispy Pork Pata, Spicy Thai Mince Kurobuta Pork Salad, and Mini Ensaymada with Pork Lard are some of the featured dishes.

Mondays, Tuesdays, and Wednesdays from June 5 through June 28, 2023, the Dinner Buffet at Café Ilang-Ilang will feature a rotating selection of these delectable dishes.

The rate is Php 3,145 per person, net. Children ages 5 to 12 pay a discounted rate, while children ages 4 and younger travel free of charge.
